Recipe of garden fresh TFL tomatoes freshly picked from “The Farm Life” farms and fiber rich chickpeas.
Ingredients:
1 cup cooked chickpeas
1 cup tomatoes, halved
1/4 cup chopped fresh basil
2 tablespoons olive oil
1 tablespoon balsamic vinegar
1 garlic clove, minced
Salt and pepper to taste
Instructions:
Rinse and drain the chickpeas.
In a large bowl, combine the chickpeas, cherry tomatoes, and chopped basil.
In a small bowl, whisk together the olive oil, balsamic vinegar, and minced garlic.
Pour the dressing over the chickpea mixture and toss to coat.
