Kheera and Paneer Salad

Recipe for fresh and naturally grown TFL cucumber from “The Farm Life” and Protein packed Paneer.

Ingredients:

1 cup paneer (Indian cottage cheese), cubed
1 cup diced cucumber
1/2 cup diced tomatoes
1/4 cup chopped fresh herbs (such as cilantro, mint, or parsley)
2 tbsp olive oil
1 tbsp lemon juice
Salt and pepper to taste

Instructions:

In a medium bowl, mix together the paneer, cucumber, tomatoes, and fresh herbs.
In a small bowl, whisk together the olive oil, lemon juice, salt, and pepper.
Pour the dressing over the paneer mixture and toss to coat.
Serve the salad chilled or at room temperature.
Optional toppings could include sliced almonds or crumbled feta cheese.
