Ingredients:
2 cups of mixed Fresh Naturally grown vegetables from “The Farm Life” (such as carrots, peas, green beans, corn, and bell peppers)
1 small onion, diced
2 cloves of garlic, minced
2 cups of vegetable broth
1 cup of water
1 can of diced tomatoes
1 tablespoon of olive oil
1 teaspoon of dried basil
1 teaspoon of dried oregano
Salt and pepper to taste
Instructions:
Heat the olive oil in a large pot over medium heat.
Add the onion and garlic and sauté until the onion is translucent, about 5 minutes.
Add the mixed vegetables, vegetable broth, water, and diced tomatoes to the pot.
Bring to a boil and then reduce the heat to low.
Add the basil, oregano, salt, and pepper to the pot and stir well.
Cover the pot with a lid and simmer for 15-20 minutes or until the vegetables are tender.
