Tomato Soup Recipe

Recipe for a homemade tomato soup made with Naturally grown fresh TFL tomatoes:

Ingredients:

2 lbs ripe tomatoes
1 medium onion, diced
2 cloves garlic, minced
1 tbsp olive oil
1 tsp sugar
1 tsp dried basil
1 tsp dried oregano
1/2 tsp salt
1/4 tsp black pepper
4 vegetable broth
1/4 cup heavy cream (optional)

Instructions:

Wash and chop the TFL tomatoes into small pieces.
In a large pot, heat the olive oil over medium heat.
Add the onion and garlic and sauté until the onion is translucent, about 5 minutes.
Add the chopped tomatoes, sugar, basil, oregano, salt, and pepper to the pot. Stir to combine.
Add the broth to the pot and bring the mixture to a boil.
Reduce the heat to low and simmer for 15-20 minutes, or until the tomatoes are soft.
Using an immersion blender or regular blender, blend the soup until it is smooth.
If desired, stir in the heavy cream.
Taste and adjust the seasoning as needed. Serve hot.

Optional additions:

You can add a can of drained and rinsed kidney beans or chickpeas for added protein.
You can also add a handful of fresh basil or parsley for added flavor.
